Good Guinness Cakes

Guinness cakes 🧡 Even my husband said these were awesome despite them being Guinness, gluten, grain and sugar free! So not actually Guinness cakes at all...but do you have a better name?

Ingredients

đŸ’„100g Desiccated coconut

đŸ’„30g Raw Cacao Powder

đŸ’„2 tblsp Enzy Vanilla Protein Powder

đŸ’„1/2 tsp Stevia Powder 

đŸ’„50g coconut oil 

đŸ’„1/2 tsp Grated raw ginger

đŸ’„1 tblsp any soft sweet fruit purĂ©e (we choose fresh mango but could use any to your liking)

đŸ’„1 egg (remove if choosing the raw recipe) 

Topping: đŸ’„4 tblsp coconut cream (either use coconut cream or the creamy top of the canned milk) 

đŸ’„Cinnamon powder sprinkle

☝Rub everything apart from egg together until a nice paste is formed.

☝You can choose to keep these raw at this point and place into a bun tin then into the fridge for an hour, then spooning on the topping  and placing into freezer as per cooked version below.

☝OR for the non-Raw version, add the egg and bake in oven for 12-15 mins.

☝Leave to cool before adding the topping.

☝Place in freezer for 30Mins to consume immediately or if in freezer or longer, remove 20min before serving.
