Paleo Keto Granola

Makes 8 cup-sized portions

🥄2 cups gluten-free large rolled oats (replace with 2 cups unsweetened shaved coconut flakes for Keto version)

🥄1/2 cup desiccated coconut 🥄2 handfuls raw cashews and almonds 🥄 2 chopped medijool dates (remove or replace with 1 grated apple for Keto) 🥄 1 tblsp coconut oil  🥄 1/4-1/2 cup almond milk (need less for Keto) 🥄 1 tblsp maple syrup (remove for Keto)

☝️Mix altogether, use hands to rub in the coconut oil throughout. 

☝️Lay on baking tray and bake for 20min @160C.

☝️Leave in tray to cool - when still warm (but be careful it’s not too hot to touch!) break up any bits that have clumped. 

☝️Once cool, store in airtight glass jar. 

🥥Coconut oil contains high levels of Lauric acid, the saturated fat that has anti-inflammatory properties and can help maintain blood sugar balance when consumed as part of a low sugar diet.
