We started this off as a “microwave only bake” however it turned into an microwave and oven bake instead - if you don’t have a microwave it works in an oven only too. And what a yummy dessert this is. Dessert because it’s moist and sticky - and totally like a bread & butter pud.
No gluten, refined sugar, animal fats or dairy, we are onto a winner.
25g (1tblsp) coconut oil
20g flax seeds
25g desiccated coconut
30g jumbo oats (soaked overnight)
100ml coconut water
1 tsp ground ginger
1/2-1 dessert spoon maple syrup
3 dates - finely chopped
Mix it all in a coconut-oiled Pyrex dish and microwave on full for 5 min. Transfer to pre-heated 180C oven to bake for 25 mins.
Bring out of oven and bring spatula around side of dish. Once a bit cooler either spatula out of the dish whole or cut before you remove (the latter is a lot easier!).
Enjoy as a dessert or an “alternative” snack.
💥For the Specific carbohydrate diet you can remove the dates and maple syrup and replace with 2 tsp honey.
💥Keto diet you can remove dates and maple and replace with 1tsp yacon syrup or 4 drops stevia
