Gut-lovin’ Pancakes

Makes about 8-10 pancakes

🍶1 cup Coconut flour 🥄Tblsp psyllium husk/lepricol 🍵1 cup water (boiled then cooled to warm) 🥄🥄2 tsp mixed spice/herbs (we chose cinnamon and nutmeg but also like salt, paprika, cumin or fennel seeds) ☝️Mix all dry ingredients together in a glass bowl 

☝️Slowly add in the water whilst gently mixing with a wooden spoon or your fingers 

☝️Once mixture starts to come into a ball, use hands to bind it together - almost kneeding it together 

☝️Grab a handful of dough at a time and roll between 2 pieces of parchment (to remove the need for extra flour on your surface). At this point you can use a plate or pan lid to press into your rolled shape making a neat circular pancake. 

☝️Pan fry in a touch of heated coconut oil for 2 mins either side. Should be a nice and easy “flip”!
