GRAIN-FREE LOAF: The Loaf to End All Loaves

I made this by accident and it is the best accident I've ever experienced!

All you need is:

 

A baking tray or loaf tin, greased with coconut oil.

 

Ingredients:

200g finely ground linseed/flaxseed

210ml water

1/2 tsp sea salt or rock salt

Optional 1/2 tsp any herb or spice of choice (e.g. I love rosemary for a great breakfast loaf, or ginger for an afternoon tea loaf!). 

Method:

Mix all ingredients together for 2-3 mins until they clump together. Form into a loaf shape or large dough ball. Smooth with fingers (I grease my fingers with coconut oil to avoid sticky paws). Plop into baking tray/tin and bake at 200C for 45min.

This keeps in fridge for a few days but I tend to slice it and freeze it so you can have it for weeks in freezer. 

You will not regret trying this out! I love it spread with a delicious hard butter and a sprinkle of sea salt. :)
